Coffee and Dessert - No Bake Peanut Butter Bars

This one is for all the Reese's Peanut Butter Cup lovers. From Meggan Hill at http://www.culinaryhill.com these bars have five ingredients, and can be put together in about 10 minutes. They do need to chill for at least 3 hours so you may want to make them the night before. Naturally gluten-free, with peanut butter and chocolate they are sure to become a favorite.

No Bake Peanut Butter Bars

1-1/2 cups brown sugar
1-3/4 cups powdered sugar
10 tablespoons butter room temperature, divided
1-1/2 cups peanut butter
1 cup milk chocolate chips or semi-sweet chocolate chips (can use dark chocolate if you prefer)

1. Line an 8-inch or 9-inch square pan with aluminum foil (optional - it should make it easier to extract the bars, but they will come out clean without it)

2. In a large bowl, cream 5 tablespoons butter, brown sugar and powdered sugar until smooth. Stir in peanut butter. Mix well and press into prepared pan.

3. In a small, microwave-safe bowl, heat chocolate chips and remaining 5 tablespoons butter for 1 minute. Stir carefully and continue to microwave in 30-second increments until smooth, stirring after each increment. Pour over peanut butter crust and spread evenly.

4. Chill until completely firm, at least 3 hours or overnight. Let stand 10 minutes at room temperature before serving. Store leftovers in refrigerator.

Note: If you have no brown sugar on hand, you can substitute 1-1/2 cups sugar plus 1-1/2 tablespoons molasses. In pre-chilled state, the molasses flavor will be strong and noticeable, but after they re chilled the flavor is indistinguishable from store-bought brown sugar.
