What's for Dinner Tonight?

This one is for all my vegetarian friends. My mother found this recipe and shared with me. I have passed it on to several people and we all have agreed. Love this!! Hope you all will enjoy it too!   Greek Spinach and Veggie Burgers     1/4 cup olive oil 1 clove minced garlic 1 tsp. oregano 1/2 tsp. dill weed 1/4 tsp. black pepper 1 cup herb-seasoned stuffing mix 2 eggs, lightly beaten 1 - 10 oz. package frozen chopped spinach - thawed and well drained 1/2 cup crumbled Feta cheese   Toppers: Roasted red peppers, red onion, Feta (or plain yogurt)      In a medium bowl combine oil, garlic, oregano, dill weed and 1/4 tsp. black pepper. Stir in stuffing and coat thoroughly. Stir in eggs, spinach and 1/2 cup feta - mix well. Shape into four 1/2" thick patties. Heat griddle or skillet over medium heat. Cook for 3 to 4 minutes per side or until browned and heated through. Serve on  hamburger rolls, or bagel slims/sandwich flats with toppe

Quiet Time in the Flower Bed

Every year I wait impatiently for the trees and grass to turn green, and for my flowers to bloom. After the past week of rain the grass is green, the leaves have filled out on the trees, and the buds on my plants have quickly turned to a burst of sunshine yellow and tiny purple flowers. The red and white blossoms will follow soon. When I come down the street and around the bend their beauty fills my heart and makes our home stand out from all the rest. I have carefully pulled any weeds and grass from around the plants, and spread new red mulch to enhance their beauty. They have been given plant food to encourage growth and for them to produce as many blossoms as possible over the summer. I find my time working in the flower bed to be very peaceful, allowing me time to ponder whatever is going on in my life. The worries and stress seem to melt away and my shoulders and neck relax. Celebrating Mother's Day

 Happy Mother's Day   On Mother's Day I am thankful for my two wonderful daughters, my three beautiful grandchildren, and most of all for my mother. They all bring such joy to my life. Once I became a mother I realized how much time, energy and worry go along with motherhood. How our children are our greatest joy and at times our biggest heartache. As a mother we worry when they are too small to take care of themselves. We worry when they become teenagers and are influenced by their peers - hoping they will make the right decisions. And we don't stop worrying even when they become adults and have their own families. That's just the way it is for a mother. I also know some amazing women who are like mothers to children that are not their own. How they mentor them and try to enrich their lives by sharing their knowledge and skills, and encouraging them to reach for the stars. These women are extremely valuable and deserve to be recognized on Mother's Day.

Music to My Soul

After what seems to have been a long cold winter, we finally are seeing some sunny days and a bit of warmth. I know it is still too early for the hot days of summer and boating on the lake, but that is fine with me as there will be plenty of time for that. No need to rush the seasons - we need to enjoy each one for the beauty it brings to our life.   Right now I am overjoyed to once again see the loons on the lake and hear their hauntingly beautiful song. With the warmer weather I can have the windows open a bit, and in doing so can hear them calling one another at night. The sound is music to my soul that I will cherish throughout the spring, summer and fall.   Please be still for a brief moment and share in the joy of their song............       

Communicating Without Distractions

Does anyone actually look at one another and talk anymore? I see people having a "conversation" and they are looking at their computer/phone/television, and not at the person they are "talking" to. I know that if I am talking with someone I am offended when their phone goes off with a call or text and they stop listening to respond. How can you truly be connected to the conversation if you are not giving someone your full attention? Think of how you feel if you are dismissed in the middle of a conversation. I am guilty of this same behavior. When I started my own business and purchased a new phone that could receive my email I was quick to answer or look at my phone every time I heard it go off. After a while that noise became a bit of an annoyance. When my boyfriend started to comment on the fact that I was always on the computer or phone, and that I did not even talk to him anymore it hit home. I knew that I had become programmed like Pavlov's dog. I also
