What's for Dinner Tonight? - Spanish Rice with Veggies and Chorizo
There are times I have items in the freezer that need to be used, but it is not enough on its own for a meal. Recently there was some chorizo sausage, so I went searching for ways to incorporate it into a recipe. I don't remember where I found this, but I do know that as with many of the recipes I try I made some of my own adjustments for a quick and easy meal. Delicious main dish with a great blend of veggies and spices with a kick from the chorizo. Serve with a fresh garden salad.
Spanish Rice with Veggies and Chorizo
Serves 8
1 tablespoon olive oil
1/2 white onion, sliced
1 clove garlic, chopped
1 red or yellow bell pepper, sliced thin
6 cherry tomatoes, cut in half
2 teaspoons paprika
1 cup frozen peas
1/2 lb. chorizo sausage (cooked), sliced
2 pkgs Zataran's Spanish Rice
2 ea. 14-1/2-ounce petite diced tomatoes
juice of 1/2 lemon
fresh parsley
lemon wedges
- In a large saucepan, prepare the Zataran's Spanish Rice as directed.
- In a sauté pan heat 1 tablespoon olive oil, add onions, garlic and peppers and sauté until they start to soften.
- Once the Spanish rice is done, add the onion, pepper and garlic mixture, along with the paprika, peas, and chorizo, and heat through. Add the cherry tomatoes and the juice of 1/2 lemon: heat until warm.
- Serve with fresh parsley and lemon wedges.
