Summer Gatherings Begin

July 4th - Independence Day, and the first official sign of summer. Life on the lake can get chaotic during the summer, but I wouldn't have it any other way. Things have been very quiet for several months and now the fun begins. The quiet will be broken by fireworks that will be displayed on the lake each night of this weekend and many other weekends to come. I guess we should enjoy the peace since the rest of the summer is jam packed full of guests and fun.

Winter and spring seem to last so long that it feels like we wait forever for the hot, sunny summer days. Now that they have finally arrived there are visits from my girls and grandchildren, trips to the ocean, cookouts with family and friends, leisurely boat rides and faster ones to pull the kids on the tube, and so much more. With the short summer months here in New England, we have a difficult time fitting it all in.  If anyone wants to come and we can accommodate them, we will gladly do so. I believe that you can never make enough memories for family and friends to carry with them when they go home.

We have not yet made our first trip to the beach, but now that we are retired will find a nice sunny weekday to venture over. There is something about sitting on the beach, listening to the waves rush in and out, that brings peace to your soul. The sound of the seagulls calling overhead, and children laughing and running across the sand, is like a melody written just for the summer visitors. You can easily get lost in the song.

 As I look out over the lake today, I look forward to our busy weekend ahead and will enjoy watching everyone having a great time making memories. Floating on the water, or sitting on the docks; talking, laughing and sharing a beautiful summer day. Nothing on their minds other than enjoying the moment. Who can ask for more than that?

In the UK they are known as Fondant Potatoes, and in the US, they are hardly known at all. They are buttery, crispy on the outside, creamy in the middle and worth a try. Simply Sides - Corn Bread Casserole

My sister has made this casserole at Thanksgiving for many years. It is creamy and delicious and has been a big hit with the entire family. This dish is very easy and is not only great for your holiday meal, but also for weeknight dinners. Corn Bread Casserole 1 can creamed corn 1 can whole kernel corn ( undrained ) 8 ounces sour cream 1/2 stick (1/4 cup) melted butter 1 box Jiffy corn bread mix Preheat oven to 325 degrees F. Grease a 1-1/2 quart casserole dish. 1. Mix all ingredients and pour into the prepared dish. 2. Bake at 325F for one hour. Enjoy!!

The Rock of Gibraltar

On our way to El Puerto De Santa Maria, we made a detour to see the Rock of Gibraltar. If you have ever seen a Prudential Financial advertisement, you will recognize the Rock of Gibraltar which is their logo. The Rock of Gibraltar is a single large block of stone 426 m (1,398 ft) high. It is a limestone peninsula and mountainous rock that jets out of the end of the British territory at the southwestern tip of Europe. It is home to a network of caves, including the famous St. Michael’s Cave, which is open to the public. At the top of the Rock, visitors can enjoy amazing panoramic views of the surrounding area, including Morocco on a clear day. Seeing the Rock from below is quite a sight, however, taking a tour to the top tells a much bigger story of how impressive it truly is.
