Let's Have Brunch - Raisin Bran Muffins

In addition to the traditional eggs, meats, breakfast type casseroles and fresh fruits, it's nice to add some homemade baked goods to your brunch menu. This muffin recipe I have had for more years than I can remember and they have always been a big hit. Hope your guests enjoy these as much as my family does.

Raisin Bran Muffins
 
1-1/4 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
3 cups Raisin Bran Cereal
1-1/4 cups milk
1 egg
1/3 cup shortening or vegetable oil
 
1. Stir together flour, baking powder, salt and sugar, set aside.
2. Measure Raisin Bran and milk into bowl and stir. Let stand one to two minutes or until cereal is softened.
3. Add egg and shortening to cereal mixture and beat well.
4. Add dry ingredients, stirring only until combined.
5. Pour batter evenly into 12 greased 2-1/2 inch muffin pan cups.
6. Bake in 400 degree oven about 25 minutes or until golden brown.
 
Serve warm with various spreads such as cream cheese, jams,
or peanut butter.
