What's for Dinner Tonight?
This one is for all my vegetarian friends. My mother found this recipe and shared with me. I have passed it on to several people and we all have agreed. Love this!!

Greek Spinach and Veggie Burgers
1/4 cup olive oil
1 clove minced garlic
1 tsp. oregano
1/2 tsp. dill weed
1/4 tsp. black pepper
1 cup herb-seasoned stuffing mix
2 eggs, lightly beaten
1 - 10 oz. package frozen chopped spinach - thawed and well drained
1/2 cup crumbled Feta cheese
Toppers: Roasted red peppers, red onion, Feta (or plain yogurt)
- In a medium bowl combine oil, garlic, oregano, dill weed and 1/4 tsp. black pepper. Stir in stuffing and coat thoroughly. Stir in eggs, spinach and 1/2 cup feta - mix well. Shape into four 1/2" thick patties.
- Heat griddle or skillet over medium heat. Cook for 3 to 4 minutes per side or until browned and heated through.
- Serve on hamburger rolls, or bagel slims/sandwich flats with toppers.
