Coffee and Dessert - Apfelkuchen (German Apple Cake)

This traditional Apfelkuchen is one of Germany's favorite sweet treats, and a great dessert to impress family and friends for special occasions.  It is light and not overly sweet, and delicious dusted with confectioners' sugar and topped with whipped cream. For a taste of Germany, follow this easy recipe and then make a pot of coffee and enjoy warm from the oven.

Apfelkuchen

5 medium apples, peeled and quartered
1/2 cup unsalted butter, room temperature
3/4 cup sugar
2 large eggs
1 teaspoon lemon juice
1/2 teaspoon almond extract
1/2 cup milk
1-3/4 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt

Garnish: Confectioners' Sugar; Whipped Cream

  1. Preheat oven to 350 degrees F. Grease bottom and sides of a 10-inch springform pan.
  2. Slice apples thinly without cutting all the way through.
  3. In a medium bowl, cream together butter and sugar. Beat in eggs, lemon juice, almond extract and milk.
  4. In another bowl, combine flour, baking powder and salt. Stir flour mixture into egg mixture; spread into prepared pan.
  5. Arrange apples on top; they will open as they bake.
  6. Bake 50-55 minutes or until toothpick inserted in center comes out clean.
Serve warm dusted with confectioners' sugar and whipped cream.
