Coffee and Dessert - Coconut-Butterscotch Brownies

Try as I might to eat healthier and reduce my intake of sugar, every so often I have to give in to my sweet tooth. When these cravings strike, I go to my trustworthy Betty Crocker cookbook. I can always find something that can be made from the ingredients I have available, and is quick and easy. I have been making these brownies for more years than I can remember. They are delicious and chewy, and can be ready to enjoy in less than an hour.

Coconut-Butterscotch Brownies

1/4 cup shortening
1 cup packed brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shredded coconut

1. Heat oven to 350 degrees F.

2. Heat shortening over low heat until melted (or melt in microwave); remove from heat. Mix in brown sugar, egg and vanilla.

3. Stir in remaining ingredients. Spread in a greased square pan, 8x8x2 inches. Bake for 25 minutes.

4. Cool slightly, cut into 16 - 2 inch squares while warm.
