Let's Have Brunch - Pumpkin Banana Bread
With the end of the holidays I found myself with some leftover pumpkin, and 3 very ripe bananas that needed to be put to good use. I refuse to throw food out unless I have no alternative. So I went on a hunt for a good recipe using these ingredients and found this. It is a nice moist quick bread and very yummy. Got rave reviews here and I hope you will enjoy it too!
Pumpkin Banana Bread
1/2 cup shortening
1-1/2 cups sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
3/4 cup canned pumpkin
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cups chopped walnuts or pecans
1. In a large bowl, cream together shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in bananas, pumpkin and vanilla. Combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Fold in nuts.
2. Pour into a greased 9 inch loaf pan (or five 5-3/4 in. x 3 in. x 2 in. loaf pans to give as gifts). Bake at 350 degrees for 60-70 minutes for 9 inch loaf pan (or 35-40 minutes for 5-3/4 in. pan) or until a toothpick inserted near the center comes out clean. Cool for 10-15 minutes before removing from pan to wire rack.
Absolutely delicious served with cream cheese.
