Time and Memories

As the years go by we become keenly aware of the elusiveness of time. What appears as an infinite amount of time to see and do, suddenly becomes almost impossible to find.

When I was younger I took for granted the good times with family and friends. It never crossed my mind that these gatherings filled with fun and laughter would some day be gone, and all that would remain would be the ghosts of memories in my mind. That is the folly of youth.

The wisdom of age lets us know every moment is precious; to be enjoyed to the fullest. We hang on to every moment trying to stretch it out for as long as possible; as if we can make it last forever by wishing it so. Every hug from family and friends; each funny memory shared filling a room with laughter, and each photo taken thinking it will freeze time. We hold these close and try to ensure we have as many of these moments as possible.

I am blessed to have a wonderful family, and dear friends that I count as family. The time I have with them does not happen as often as I would like, but when it does it fills my heart with joy and love. Though we cannot get together as often as we would like, when we do the conversation seems to pick up where we left off the last time we met. Catching up on our lives, and laughing at stories from earlier years. There is comfort in our closeness, like an old sweater we love wrapping its arms around us. I will hold on tight and cherish every moment we are together.

Time - there truly is never enough. Forget stressing out over things that are not important. Make the effort to see and do with your family and friends. Make memories to leave behind. Eventually, times that are so clearly in the forefront of our days, will be a distant shadow in the background like a ghost.

In the UK they are known as Fondant Potatoes, and in the US, they are hardly known at all. They are buttery, crispy on the outside, creamy in the middle and worth a try. These are the most delicious potatoes I have had in a long time! They would certainly be a great addition to any of your holiday gatherings. Enjoy! Simply Sides - Corn Bread Casserole

My sister has made this casserole at Thanksgiving for many years. It is creamy and delicious and has been a big hit with the entire family. This dish is very easy and is not only great for your holiday meal, but also for weeknight dinners. Corn Bread Casserole 1 can creamed corn 1 can whole kernel corn ( undrained ) 8 ounces sour cream 1/2 stick (1/4 cup) melted butter 1 box Jiffy corn bread mix Preheat oven to 325 degrees F. Grease a 1-1/2 quart casserole dish. 1. Mix all ingredients and pour into the prepared dish. 2. Bake at 325F for one hour. Enjoy!!

The Rock of Gibraltar

On our way to El Puerto De Santa Maria, we made a detour to see the Rock of Gibraltar. If you have ever seen a Prudential Financial advertisement, you will recognize the Rock of Gibraltar which is their logo. The Rock of Gibraltar is a single large block of stone 426 m (1,398 ft) high. It is a limestone peninsula and mountainous rock that jets out of the end of the British territory at the southwestern tip of Europe. It is home to a network of caves, including the famous St. Michael’s Cave, which is open to the public. At the top of the Rock, visitors can enjoy amazing panoramic views of the surrounding area, including Morocco on a clear day. Seeing the Rock from below is quite a sight, however, taking a tour to the top tells a much bigger story of how impressive it truly is.
